Reimagined Meatloaf
Dinner Table Worthy Recipe

Ingredients:

1.5 pounds ground hamburger meat

2 cups crushed saltine crackers

1 white onion, diced

2 tablespoons butter

1 egg

1 cup milk

1 tablespoon crushed red pepper flakes

2 teaspoons minced garlic

1 teaspoon Tony Chachere’s Creole seasoning

Black pepper


Sauce:

1 cup Ketchup

1 capful Balsamic vinegar

2 tablespoons Brown sugar

½ teaspoon dry mustard

Ingredients

½ pound chickpeas, soaked or 2 cans drained and rinsed

16 oz crushed tomatoes w/ basil

2 c. veggie broth or water

1 t. coconut or brown sugar

1 t. balsamic vinegar

2 T. dried minced onion

2 cloves garlic, minced

2 cups small tomatoes, whole (I used 8-9 campari tomatoes ) or 16 oz of canned whole tomatoes

8 pieces of bread, (I used Ezekiel Sprouted Whole Grain bread)

Olive Oil for brushing bread

2 jalapeno peppers, seeded and diced
4 cloves of garlic, diced or minced
½ cup baked sweet potato, mashed
2 cups of baked butternut squash, mashed
4 tbs white wine (divided)
2 cups veggie stock
1-3 cups water

Heavenly Chocolate Cake

4 eggs

2 cups sugar

2 sticks butter, melted

4 tablespoons cocoa

1 and ½ cup self-rising flour

2 tsp. vanilla

2 cups chopped pecans (optional)


Second layer: 2 cups small marshmallows


Icing:

1 box powdered sugar

4 tablespoons cocoa

½ stick butter, melted

½ cup Coffeemate vanilla creamer


We’ll begin by creaming four eggs with two cups of sugar. Then we’ll stir in 2 sticks melted butter, one and half cups flour, four tablespoons cocoa and 2 tsp. vanilla. Mix and pour into a greased 9×13 baking dish....
